I don’t crave ice cream often, but when I do, I usually want some kind of hot fruit topping on it. Last summer, I couldn’t get enough of the combo of peaches and rhubarb. A few nights ago, I was watching a cooking show and got inspired to cook something – it was late and I’d had a beer already, but wanted a dessert with booze in it – so I have christened this ‘Drunk Bananas’. It’s fast, easy, and you could do a hell of a lot worse calorie-wise.
2 sliced bananas, soft/ripe but not totally brown peels
1 Tbs butter
2 tsp honey
1 Tbs Bailey’s Irish Cream
Pinch of sea salt
Frozen Yogurt (read the labels, mind the sugar)
Nuts of choice to garnish (I used chopped pecans)
This recipe makes enough for 4 servings, or 2 very hungry people.
Melt the butter in a pan over medium heat until it is bubbling. Add the sliced bananas and honey. Cook until bananas lose their shape (this shouldn’t take long if they are ripe enough), about 1-2 minutes. Add the baileys, cook down, stirring occasionally, until bananas have mostly dissolved, about 2-3 more minutes. Remove from heat, add salt, stir. Let stand about 2 minutes to cool slightly.
Place equal amounts of banana mixture in bowls. Place frozen yogurt (or ice cream) on top of the bananas (otherwise it will melt instantly… Honestly, I kinda like it that way, but it looks messy and basically turns into soup). Garnish with nuts.
